Harvest Season: Late Summer / Early Autumn
A rare and balanced "marriage" of Cretan nature. Our bees, moving between the forests of the White Mountains and the slopes with wild thyme, create a honey with a deep amber color and unique density.
Taste: Combines the spicy aftertaste of thyme with the earthy, woody notes of pine.
Aroma: Intense and complex, which brings to mind the coolness of the Cretan forest.
Properties: Due to the lower sugar content, it crystallizes slowly and is rich in trace elements and antioxidants.
Harvest Season: Summer
In the heart of summer, at an altitude of 600 meters in the village of Agia Irini, Chania, our bees collect nectar from the blooming Cretan thyme.
This honey stands out for its light, bright color, intense, intoxicating aroma and full flavor that leaves a pleasant herbal aftertaste.
The purity of the air and the specificity of the soil in the White Mountains offer a product of high nutritional value, wholesome and full of the energy of the Cretan sun.
Harvest Season: Autumn
A true treasure of the White Mountains. The autumn heather (susoura) blooms on the slopes of Agia Eirini, giving a honey with a unique personality and high biological value.
Taste: Full, bitter and slightly caramel, which "stays" on the palate.
Color: Impressive dark copper, which testifies to its rich content in minerals.
Properties: It is considered one of the most nutritious honeys in the world, rich in silicon, boron and antioxidants. Due to its natural composition, it crystallizes quickly, acquiring a velvety texture that melts in the mouth.
Harvest Season: Autumn
In the fertile plains of Chania, where the carob tree (the “chocolate” of Crete) has thrived for centuries, our bees create a truly unique honey. Carob honey is a tasty treasure with a special identity.
Taste: Rich, full-bodied and slightly bitter, with strong notes of chocolate and butterscotch.
Aroma: Special and deep, reminiscent of the aroma of ripe carob fruit.
Color: Very dark brown, almost black, which testifies to its high content of nutrients.
High Nutritional Value: It is rich in calcium, iron and fiber, and is considered ideal for strengthening the digestive system.
Harvest Season: Spring
On the verdant hillsides of the village of Agia Irini, spring brings a feast of colors and aromas. Our bees collect the colorful pollen grains from the rich flora of the area—from wildflowers, herbs and flowering trees—bringing all the vibrancy of the Cretan land into a jar.
Polyfloral Composition: The variety of flowers of Agia Irini offers a complete amino acid and vitamin profile.
Natural Vitality: Collected using traditional methods that respect the bee and preserved in the freezer to keep its enzymes and nutrients intact.
Taste & Texture: Soft grains with a pleasant, slightly sweet taste and aromas of freshly cut flowers.
